The process of digestion begins in the mouth, which plays a crucial role in both mechanical and chemical digestion. When we eat, our teeth break down the food into smaller pieces in a process known as mastication. This mechanical digestion not only makes the food easier to swallow, but also increases the surface area of the food particles, making them more accessible to the digestive enzymes.
The saliva produced by the salivary glands in the mouth contains an enzyme called amylase. This enzyme begins the chemical digestion of carbohydrates by breaking down complex carbohydrates, such as starch, into simpler sugars. This process is known as hydrolysis. The saliva also moistens the food, making it easier to swallow and move down the oesophagus.
The tongue also plays a significant role in digestion. It helps to mix the food with saliva, forming a soft mass called a bolus. The tongue then pushes the bolus towards the back of the mouth and into the oesophagus, initiating the process of swallowing.
In addition to these physical processes, the mouth also contributes to digestion through the sense of taste. The taste buds on the tongue help us recognise and appreciate different flavours, which stimulates the production of saliva and digestive juices, preparing the digestive system for the process of breaking down food.
